a recipe calls for cake flour and i only have all purpose flour... which substitution do you use?
1. 1 cup minus 2 Tablespoons all purpose flour can be safely substituted for 1 cup of cake flour
or
2. mix 1 3/4 cup of all-purpose flour with 1/4 cup of cornstarch. This yields 2 cups of cake flour for your recipe.(An easy way to do this is to put 2 tablespoons of the cornstarch into the bottom of a 1 cup measure, then fill to the top with flour.)

I've used the cornstarch before with no problems.
