Hi All!
Got a call from a bride- to -be today who wants me to frost 2 hatboxes, a large and a medium to be the bottom layers of her wedding cake, then bake the top tier.

I have never frosted a dummy cake before, would a hatbox work? She said she saw it on-line a while ago, but she couldn't remember where. She also said she might like it covered in fondant, I have never done a square cake covered in fondant. Are the corners hard to do?

Also, how would you price this cake?

Any help or comments appreciated! Thanks in advance!

I've never heard of frosting a hat box. I don't understand why one would do it. icon_confused.gif

Aren't hatboxes round? Why would corners be an issue? In any event. corners aren't that hard to do, but it wouldn't hurt to practice on a dummy or, well, a box! Just remember to smooth down the corners first. Then, you can smooth the flat areas.

In Sylvia Weinstock's book "Sweet Celebrations" she has a buttercream hatbox cake with directions! Check it out.
