Left Over Egg Yolks

What does everyone do with the egg yolks left over from SMBC? Any good recipes?

This recipe is in the recipe section. I saved it but have not tried it yet.

I have this recipe for a fruit salad...it only uses one egg yolk but it sure is good.

FRUIT SALAD

Bananas
Pineapple chunks
miniature marshmallows
maraschino cherries

DRESSING
1/2 cup sugar
1 tsp enriched flour
1 egg yolk
2 1/2 TBS lemon juice
1/2 cup unsweetened pineapple juice
1 cup heavy cream, whipped
Combine sugar, flour and egg yolk. Add fruit juice.
Cook in double boiler till thick. Cool. Fold in whipped cream.

I think, when making yellow cake you can use 2 egg yolks in place of one whole egg also.

I also make home made noodles and you can use only egg yolks in those instead of the whole eggs.

There actually was a post sometime back on this, someone said they made custard another made ice cream........list goes on and on. I'll see if I can find it but I would say flan sounds good if you like it. Find recipe on my blog, below.
