Cinco De Mayo Cake Ideas

I know it's last minute, but I'm trying to come up with recipe ideas for a cinco de mayo cake. I was thinking margarita or pina colada or some kind of mexican chocolate cake. I haven't tried any of these recipes on here, so any ideas or favorite cake recipes and fillings would help. Thanks a bunch!!

Pina colada sounds good to me. Or citrus, or coconut.

When I think Mexican desserts the only thing that comes to mind is fried icecream or flan. lol Sorry I can't help you more, but hopefully this will give you a bump.

You can pretty much take any cake recipe and tweak it to suit your needs.

Margharita - Replace some of your liquid with margharita mix. For added flavor you can zest a lime into your batter.

Pina Colada - Replace some of your liquid with pina colada mix. For added flavor you can add a handful of shredded coconut.

Mexican Chocolate - Add 2 tbsp. of cinnamon to your favorite chocolate cake recipe.
