Can You Freeze Mmf?

No doubt this has been addressed - however my question is:

Can you freeze MMF? And how best to thaw it?

There is no reason to freeze it, it will not spoil at room temp.

How long does it keep its fresh taste? 2-3 months +/- ??

Since it is pure sugar it never loses or changes its "taste". The issue is that it does eventually dry out and become unusable. If you wrap in several layers of plastic and put it inside a plastic storage bag, it should keep for at least 1-2 months. When you're ready to use it, pop it in the microwave in 5-10 second increments until it gets soft enough to knead with some shortening on your hands. If it doesn't "bounce back" when you do this, then it's too old and has to be thrown away.
