For this cake I'm doing, I'm using cream cheese as the icing and filling, my question is if I ice the cake the night before the event is it okay to have the cake sit out over night? The reason I would not want to refrigerate it is because I'm covering it with fondant and I don't want to put it in the refrig because it will make the fondant shiny.

i use a cream cheese filling often and don't refrigerate the cake once it's covered in fondant. i've even eaten some of them and they taste perfectly fine to me. (note: my cakes are in the fridge until thursday night or friday morning for a saturday event)
