I'm looking for a really delicious cupcake recipe. I have tried Auntie Em's and several from Family Circle magazine and the food network but not completely satisfied with them. Does anyone have a recipe that they would recommend?
I made this one and loved it, the frosting was just a little heavy on the lemon flavor though so definitely use it sparingly. You can see a picture of mine in my photos, its the one with the pink frosting with coconut shreddings on top. Sorry I can't remember where I got this from, I just wrote it on a recipe card.
Coconut Cupcakes
Oven Temp 325
Bake Time 25 min
Serves 18 (I did half everything on the original recipe and still got a ton!)
3 sticks unsalted butter, room temp.
2 cups sugar
5 large eggs, room temp.
1 1/2 teaspoon vanilla extract
1 1/2 teaspoon almond extract
3 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
14 ounces sweetened, shredded coconut
Preheat oven to 325 degrees.
Cream butter and sugar on high speed until light and fluffy, about 5 minutes with stand mixer on low.
Add eggs, one at a time and mix well after each.
Add vanilla and almond extracts and mix well.
In separate bowl sift together flour, baking powder, baking soda and salt.
In 3 parts alternately add dry ingredients and buttermilk to batter beginning and ending with dry ingredients.
Mix until combined.
Fold in 14 ounces of coconut.
Fill each liner 3/4 full.
Bake for approx. 20-25 min or until golden brown and a toothpick comes out clean.
FROSTING
1 lb cream cheese, room temp.
3 sticks unsalted butter, room temp.
1 teaspoon vanilla extract
1/4 teaspoon lemon or almond extract (tone this down though, it was strong for me!)
1 1/2 lbs confectioners sugar, sifted
On low speed, cream together cream cheese, butter, vanilla and almond or lemon extract.
Add sugar and mix until smooth.
To garnish these you can add some shredded coconut on top!

That's the one drakegore. =) I made a mock whipped cream frosting to go with the ones I made. Really good!
