When using simple syrup is it better to apply it to the cake before you freeze it, or is it okay to freeze the cake and then apply the simple syrup once the cake is at room tempature?
Also, if you start to bake a cake at the beginning of the week a weekend event, is it better to freeze the cakes or should you just place them in the refrig and then decorate after bringing to room tempature the day before the event?
I haven't used simple syrup so don't have the answer for you but if i were to do it I would do it before but if your freezing it and your cake is already moist to start off with you do not need the simple syrup on it.
As for your 2nd question, I would freeze it not refrigerate. Refrigerating cake tends to dry it out faster.
