I have a bride who called asking me if I can make her wedding cake a strawberry shortcake. I am concerned about making it with the whipped cream and cream cheese filling that I usually use because I'm afraid of it going bad when the cake sits out for a few hours. Does anyone have any suggestions for what I can use? Thanks!
Non-dairy whipped topping......Rich's Bettercreme OR Frostin Pride. I think there are other brands also but those are the only 2 I'm familiar with.
They can sit out at room temp (up to about 80 degrees) w/o problems.
Also Earlene Moor has a cr ch b'cream recipe that can be left at room temp for up to 3 days (or more).
