weather and what is safer buttercreme- with very little decoration or MMF?

I am doing a wedding cake in SC in late May: 7 tiers, pound cake with buttercream (made with Sugarshacks recipe) and chocolate cake with chocolate ganache, all covered in fondant.

indydebi swears by her recipe for high heat and humidity. It crust well, taste good and is easy to smooth.
