I am making a cake with fondant on it for an anniversary. I want to make my filling homemade and i was wondering what kinda suggestions you have for fillings that are really yummie and i dont have to refrigerate. Thank you so much.
I make an easy shelf-stable strawberry filling by using the frozen strawberries. I just puree them and cook them with about 3-4 teaspoons cornstarch until they begin to boil, then cool. Adjust thickness by adjusting the amount of cornstarch you use.
I would imagine that you could do any frozen fruit the same way.
You can also use jam added to buttercream to make more of a mousse filling.
