I'm trying to make MMF to take to the Wilton class tomorrow (the teacher said it was OK). I tried to follow the instructions under the articles using my KitchenAid, but my bag of marshmallows is only 10.5oz instead of 16oz. I didn't add all the powdered sugar called for, but it's pretty stiff. I added shortening to try and make it more pliable, but it still cracks and breaks instead of being stretchy. I'm letting it cool down and rest in the hopes that it will help. Do I need more shortening? Can I add too much shortening?
P.S. I added lemon extract to it and it tastes great!
If it's cracking and breaking, you might have to make it again. You need it to be soft and pliable. Definitely try to soften it up with shortening!
Good luck! I always leave 1 cup of PS out...and then I test it...and then if it needs it, I'll add the extra powdered sugar.
