Need Help Fast! Icing Question!

I had 5 cakes due this weekend, 4 for yesterday and 1 for today. I went ahead and baked and iced today's cake yesterday. Yesterday's drop off ended up taking all day! Literally, I was too tired to drive home last night so I stayed at my mother's. So, I get home today and go to smooth the icing on the cake, I thought that it would be good and crusted by today....well, it's too dry to smooth!!!!! It keeps cracking everytime I try! What can I do? Can I save it? It's due at 1pm today!

I would pop it in the freezer until the icing is partially frozen the take out add more icing and smooth. I had the same problem with a wedding cake yesterday and this is what I did. Worked very well. HTH

You are going to have to refrost it. Leave the frosting that is on the cake, on there, and put a fresh coat over it.
