So I've tried a few recipes and still haven't found a great cake. I tried the WASC loved it but want something besides that.. Most I have tried besides the WASC are just too crumbly. Looking for a white/yellow cake that are okay being handled icon_smile.gif Just curious what was everyone's go to cake icon_smile.gif

Here is a really good recipe for a yellow cake from Serious_cakes. When I make it, my eggs don't end up making it too yellow! You can make variations with this recipe quite easily too.

I just found this one...it's easy and comes out very white AND it holds up great and tastes wonderful...It is now my "go to" cake...

I just made Serious_Cakes yellow cake and it tastes kind of like a cross between corn bread and pound cake.. wasn't bad but wasn't what I expected. icon_sad.gif

My victoria sponge cake came out dry....what did you do to make it moist?

mine always just come out moist, though when i feel like it, il add some simple syrup which helps make it more moist.
maybe you overbaked, or mis-measured?

And Collette Peter's White cake...the variation with almond extract and almond paste creamed in with the butter. I'm not at home and can't find it on the web, but if you have her book, it's there.
