Trying to find out if Gum Tex (Karaya Gum) can be used in place of Gum Tragacanth in a recipe for Gum Paste.

Anybody?

I believe it is interchangeable. Check out this link for a gumpaste recipe

That is the same ingredients and the same steps to me, just worded differently as the wilton gumpaste recipe that they have in their yearbooks. I am not sure what recipe that you are using but I use the wilton one. It works for me but then again I don't have anything else to compare it to. HTH
