hi.. i am a newbie to the cake business, and i am having a bit of a time finding great cake recipies icon_cry.gif . I have tried a few from here, online, and from wilton as well. I notice that the cakes are a bit denser than im use to, and thats ok, but some have no taste, are hard (maybe a bit too dense) and have alot of air pockets. i really dont want to resort to boxed cake, i am looking for great recipes for all basic flavors first, so if i need to make a cake for someone, i can just make it..any suggestions? Chocolate, vanilla, white, yellow, red velvet.. i guess those are the basics.

I don't have any recipes for you but personally, in my experience I have better results with using cake flour rather than all purpose flour.

I like Dorie Greenspan's Perfect Party Cake, and the chocolate butter cake from Rose Levy Birnbaums Cake Bible. Those are my 2 standards!
