Okay making sheet cakes for a bridal show tomorrow...was stupid and decided to try a new filling for my pumpkin cake (which is iced on the outside in whipped cream cheese icing). Decided to try a Brown Sugar Icing made with egg whites on a double boiler. *sigh*
So I followed the instructions but it seemed like the brown sugar was not dissolving properly so I think I overcooked it...it ended up sort of merangue-y and the sugar is still gritty.
Thinking maybe it was supposed to be that way, I foolishly put it in the center of my cake, which is so moist once it gets together, there is no taking it apart...plus I got it together crooked anyway since it was falling apart. Yikes.
Once I got it in there, hubby announced the filling is horrible and he can't believe I'm using it!
I admit as much as I like brown sugar, I don't think it will go over great as far as the consistency. (Taste is not bad, just sweet, with the brown sugar consistency like in cookie dough or something...with that sort of semi-pliable consistency of a thick merangue)
Soooo I do not have time or supplies to totally remake this and am working on my wedding dummy the rest of the day.
If I rename the filling "Brown Sugar Divinity" or "Brown Sugar Merangue" do you suppose it will make it go over better? LOL. The pumpkin cake itself is always a big hit and the cream cheese icing is very creamy and good...but we have a semi-stiff gritty brown sugar stuff in the middle I'm going to have to pretend its supposed to be that way.
Or what about "Brown Sugar Crunch filling"? he he....

Hmmm talking to myself....what about "Brown Sugar Cookie Dough"? It kinda tastes like that...hmmm....
I just know that I can save this with the name...LOL....call it "brown sugar cream" and I'm gonna get dirty looks but maybe "brown sugar cookie dough" will be more positive?
I bet the longer it sits the less gritty it will be... Oh, and I like your Brown Sugar Divinity suggestion
LOL thanks everyone! Ended up just saying "brown sugar filling" and everyone seemed to like it pretty well, surprisingly!
Oh good! I'm glad that it worked out. It's nerve racking when you aren't sure if it's going to turn out ok. Good job on being creative though! =o)
