I was asked to make mini cakes or petit fours...
I was wondering How do you get the shape of these cakes... round or square??
I was thinking cookie cutters but I'm not sure

If anyone can help please let me know...
Also does anyone have a poured fondant glaze recipe they would like to share...
CAn you make poured fondant in Choc.??

When I do it, I make the cake in jelly roll pan and cut when cool with cookie cutter

You can also use biscuit cutters to cut them out.

Just made this today. Mine was to pour over fondant covered Darolies.
Quick Pour Fondant Icing
6 cups confectioner's sugar sifted (1½lbs)
½ cup water (4 ounces)
2 tanlespoons light corn syrup
1 teaspoon Wilton Almond extract
Wilton Icing colour optional
Place sugar in saucepan. Combine water and corn syrup. Add to sugar and mix well. Place over low heat. Don't allow temperature of fondant to exceed 100 deg F. Remove from heat, stir in flavour and icing colour. Place cakes on cooling grid.Pour fondant into centre and work towards edges. Touch up bare spots with spatula. Let set.
