I put frozen diced strawberries with the syrup drained off into my standard buttercream, then I add juice until I like the flavor.

you can make a coconut filling by adding coconut pudding to a stabalized whipping cream

I always use a filling that I got from here... great tip....

Jar of strawberry jam or preserves and a small package of strawberry jello. Heat up the jam about 1 minute in microwave just until slightly warm then mix in the jello til it is dissolved....

Works great for any flavor..

I make a Strawberry filling. This is what I use on my cakes.

2 cup sugar
3 cup water

bring to a boil.
add1 cup warm water with 5 Tbls. cornstarch disolved.

stir quickly this will be very hot and thicken quickly. remove from heat add 1 large box of strawberry jello. stir add 2lbs. cleaned and sliced strawberries.

let cool on counter fill cake when cool.

This is the same recipe we made in a big boy restaurant.
good luck
