Hi everybody,
I am new to this website but am loving it! I need an idea for a lemon cake filling that doesn't need refrigeration because it will be covered in fondant. Since it is a lemon cake I didn't want it to lemony, if possible.
Thank you ahead of time for your suggestions.

I agree, raspberry goes very well with it. Blueberry and strawberry also go well. Blackberry would be wonderful! It would also make it very pretty when you cut in to it icon_smile.gif

Raspberry filling, strawberry filling, and lemon curd are my fav fillings in lemon cake. You could do a Strawberry Lemonade cake ~ lemon cake, strawberry filling, and buttercream flavored with unsweetened Kool-Aid brand lemonade mix. That makes the BC so zingy and wonderful!

I love lemon with pretty much any filling, although raspberry is definitely popular! If you didn't want to go with fruit, a creamy vanilla filling would be delish! Very spring-y.

And if you find a perishable filling you want to try, don't be afraid to refrigerate a fondant covered cake. I do it all the time and have never had any problems! When you take it out of the fridge, just let any condensation that forms evaporate on its own. That's the key.

for sure you have to try blueberry filling! It is to die for with lemon cake. I made it for a summer party and I have never seen a cake eaten so quickly!

Better yet, white chocolate raspberry. Yum. Or cheesecake/cream cheese filling. Yum, yum. My favorite is 7-minute frosting though but it's not great to ice with.
