Hello to all,
I am a newbie to working with chocolate. I have looked everywhere with no succes. My question is: does chocolate ganache ever 'set'?
Does it ever become "not sticky"?

Any help is much appreciated!

Hello!

The answer is no. If you touch the ganache, it will mar the surface. The recipe I use is 9 ounces good quality chocolate, 8 ounces heavy cream, and a tablespoon of butter.

Different ganache recipes may behave differently though. icon_smile.gif
