How Do I Do This Technique Of Quilting Fondant??

I believe it is the "diamond impression mat". You might want to look into that & see if that's what your looking for. HTH
I did a quilted pattern like that on the pillow cake in my photos. I achieved it using a diamond impression mat that I purchased from Global Sugar Art. It was very simple to do with the impression mat.

Okay, so that does help out a lot...but what do you do? You roll out the fondant and then press that into it, and then put it on the cake? How do you smooth the fondant onto the cake without the design from getting all messed up? You can tell that I am in waaaaaay over my head here!! haha
You cover the cake first, THEN use the impression mat. An alternative to a mat (and my preferred method) is to use a right triangle and a quilting wheel to trace the lines onto the cake. I prefer this to a mat, as I can make the pattern as open or closed as I want, without having to purchase multiple mats, as well as being able to more precisely target sections of cake to quilt, when I don't want it over the whole layer.
