Hi, I'm doing a cake this Saturday and the lady wants a white cake with a creamy(like a mousse or something) raspberry filling. I have never done this before and I was wondering if anyone had any recipes or suggestions. The only problem is that I need to assemble it the night before and decorate it the next day. What holds up? I have to deliver the cake by 12 and the party is from 1-3. Any help would be appreciated. Thanks.-
do you have access to bettercream or one of the other very similar whipped non dairy products?
If you do mix seedless raspberry jam with it and you will have a lovely mock mousse
Wilton also puts out a whipped icing that will work for this.

The raspberry filling that gets the best reception is one that I got from someone on CC, sorry I don't remember who. It's simple:
1 can raspberry pie filling (I've used Comstock and Solo brands)
8 oz. cream cheese
1 jar of marshmallow creme
Beat the cream cheese until creamy and add the marshmallow creme. Once it is mixed, add the pie filling.
It's creamy and good without being uber sweet like BC and jam. Easy too!! Good luck!!
SMBC mixed with raspberry jam. It will make you swoon. So delish. (I don't even like raspberry fillings but I can't get enough of this one).

The above suggestions sound really great. If nothing else you can mix seedless raspberry jam, pie filling or the sleeved raspberry with your b'cream.
Stir seedless raspberry jam to "loosen" it. Fold into stabilized whipped cream.
