What do I need to know about applying fresh roses to my cake? I have never used them before. Do I have to use the flowers stems or can I apply them directly to the cake? I would appreciated any advice on this matter.

Whatever you do, don't poke bare stems directly into a cake. This is totally gross (they weep out the end and have nasty chemicals on them. You can wrap the stems in plastic wrap or foil. You also can dip in wax or chocolate. Then you can poke into the cake. You can get little floral tubes to stick them in. I perfer to arrange in oasis floral foam. If you don't know how to arrange, check with your florist to see if they can help.

In addition to what Jen can use a drink straw filled w/icing to hold them.
