OMG I just got an order for 4 dozen cupcakes for sunday. The problem is they need some to be gluten free, some to be diabetic and some to be lactose free. I have the diabetic and lactose down but I have never done gluten free. Can some one give me some tips on this. I usually use doctored cake mixes so not quite sure if there is good gluten free mixes or not.

Pamela's GF chocolate cake mix is excellent! Make sure if you add any extracts that those are GF too...

I don't know about cake mixes. I do know there are several recipes on allrecipes.com such as the one I posted the link to.

I forgot to add that I've doctored it before with great results... I add a cup of sour cream, and 1 tsp of GF vanilla...

Both of my local grocery stores, and my local health food store sell it. I've also ordered from Amazon.com but I don't know if it would get to you in time.
