I have frozen some cupcakes, varying flavors, and varying time in the freezer, so I am not certain if the time/frostburn could have affected them, but I am wondering why some completely fall apart after they defrost.
Did you wrap them well? (Saran, tinfoil, ziploc, tupperware)
not really, i have read where that affects them, but how? they were still moist and yummy, just fell apart.
