I saw the decorated cakes from Elegant cheese cakes and I was wondering how they cover cheese cakes with fondant? I think it is probably very difficult to cover a cheese cake with fondant since cream cheese cakes are not very steardy....so how they do it? Do you think that the cakes are maybe not really cream cheese cakes? anyone know what kind of cheese cake recipe they use?

I'm thinking a NY style cheesecake could be covered in fondant. Not a huge amount of decor, but it could take some. It is a richer, denser cheesecake.
