My husband loves publix carrot cake. Is there a recipe out there anything close to the one from publix(if you have tasted it before)

Have never had a Publix carrot cake....

But you asked for a great carrot cake recipe, and I must say that the Carrot Cake Straight Up is excellent:

this is my favorite recipe I can't remeber where I got it but I've had it for years.
Carrot Cake with Cream Cheese Frosting

1 Cup vegetable oil 2 tsp. cinnamon

1 Cup sugar 2 tsp. baking soda

1 Cup firmly packed brown sugar 1/4 tsp. salt

4 eggs 2 Cups grated carrots

1 Cup flour 1 8oz. can crushed pineapple drained, 2 TBL reserved

1 Cup whole wheat flour 3/4 Cup chopped walnuts


Preheat oven to 350* Butter a 9 x 13 pan. Using mixer combine first 4 ingredients. Sift together both flours, cinnamon, baking soda and salt. Mix into liquid ingredients. Stir in carrots, pineapple & juice and walnuts. Pour into prepared pan and bake for about 45 min. until done.


Cream Cheese Frosting

2 8oz. pkges. Cream cheese 1 ½ Cups powdered sugar

3 Tbls. Butter room temp. 2- 3 Tbls. Milk

2 tsp. vanilla

Using mixer combine cream cheese, butter and vanilla. Beat in powdered sugar alternately with milk. Depending on how you like the consistency of your frosting is how you measure the milk I usually just use 1 Tbls. because I like a thick rich frosting !!!!

Here is one I got from a friend. It's the best carrot cake I have ever eaten. icon_razz.gif

2 cups sugar
2 cup flour
2 tsp cinnamon
2 tsp baking soda
4 eggs, beaten
1 (8oz) can crushed pinapple (with juice)
1 1/4 cup oil
2 tsp vanilla
1 tsp salt
3 cups carrots, grated
1 cup pecans, chopped
1 cup flaked coconut


Preheat oven 350 degrees

Sift the sugar, flour, cinnamon, baking soda and salt into a bowl.

In a large bowl mix eggs, crushed pinapple, oil, vanilla, coconut, carrots, and pecans. Add the dry ingredients to the liquid mixture.

Bake in a well greased and floured 9x13 pan for 40 min or until toothpick comes out clean.


Icing

6 oz cream cheese softened
3 1/2 cups powdered sugar
1/2 cup butter
1 tsp lemon juice
dash of salt

With a mixer, cream together the cream cheese and butter. Add salt and lemon juice. Slowly add in the powdered sugar. mix until smooth. spread on cake after it has cooled.

Are there other icings that can go with carrot cake besides cream cheese icings? (I'm not big on cream cheese). Just wondering!
