my sister has a question I could not answer, she is supplying cakes for restuarants that require to be frozen. they need cheesecakes and angel food cake, I know freezing the cheesecake may not be a problem, but how will freezing affect the texture of Angel food cake and is she does not freeze it, what can she use as a preservative to make the shelf life much longer

(she is a scratch baker)

I don't know about angel food cake. I would guess any cake can be frozen. There are a lot of threads about it, but I will give you a bump. Maybe someone else can answer.
