I'm going to give you my doctored recipe. Everyone loves this cake:

1 box white cake mix
3 Tbsp flour
1/2 cup buttermilk (you can use water if you don't have buttermilk)
1 pkg strawberry jello gelatin
1/2 cup oil
4 eggs
1- 6 oz pkg of frozen strawberries, thawed (I use unsweetened)

Preheat oven to 350. Grease and flour 8 inch pans. Combine all ingredients in mixing bowl and
beat for 3 mins. Bake 30-40 mins, till pick inserted comes out clean.

My great aunt's reicpe. Everytime I take it somewhere, I come home with an empty cake plate.

Cake
1 white cake mix
1 box frozen strawberries (I use Bird's Eye)
1 small box strawberry jello
3 eggs

Mix everything including juice with strawberries. Bake at 350 until done.

Icing
1 box confectioners sugar
1 box frozen strawberries
1 stick melted butter

Mix everything including strawberry juice and ice cake. You will actually have to use a ladle because the icing is so thin.


The recipe as written produces a dense cake that will sink in the middle. I've found that if I use sugar free jello that it produces a lighter cake and does not sink.

This is my great-aunt's recipe and is beloved by the family. As far as I know, I'm the only one with the recipe.

Here's another one- and with the frosting - it's to die for icon_smile.gif


Strawberry Cake

1 Box white Cake Mix
1 (3oz) box strawberry jello
1 (10oz) box frozen strawberries, in syrup - thawed and pureed
4 large eggs
1/2c veg oil
1/4c water

350 oven

Large bowl, combine cake mix and jello. Add pureed strawberries, eggs, oil and
water. Beat at Med speed until smooth. Poor into prepared pans and bake 20 mins
or until tested done, (longer for larger sized cakes). Cool in pan 10 mins. Remove and cool on rack

White Chocolate Buttercream

1c softened butter
2c powdered sugar
6 oz white chocolate (melted and cooled completley)
3-5 TBL Half & Half or Heavy Cream

Beat butter and sugar on low-med speed untill light and fluffy. Add melted
chocolate and cream. Beat on High 3-4 minutes.

I found this on allrecipes.com. I have made this before, but it's been a while. . .if I recall correctly, it stuck to the pan, so I would line with parchment. I also think that it didn't rise all that much?? Good Luck

Strawberry Cake from Scratch

2 C sugar
1 3oz pkg strawberry gelatin
1 C butter, softened
4 eggs, room temp
2 3/4 C sifted cake flour
2 1/2 t baking powder
1 C whole milk, room temp
1 Tbs vanilla
1/2 C strawberry puree made from frozen sweetened strawberries

350 deg F, 175 Celsius. Grease and flour 2 9" rounds.

Cream together butter, sugar, dry gelatin until light and fluffy. Beat in eggs, one at a time, mixing well after each. Combine the flour and baking powder; stir into batter alternately with the milk. Blend in vanilla and strawberry puree.

Pan out and bake 25-30 minutes or until tester is clean. Cool 10 min in pan and then completely on a wire rack.
