Hi ladies!
I just posted a video in Youtube on how I stack my cakes. I am doing a 4 tier cake on this video. This system works for me, I know everybody has their way. But traveling with stack cakes is a big task and this heasn't fail me..

That was great. I have to watch it several times more. I kept looking at what you were doing and enjoying the misic, I forgot to read some of the words before it was too late!!! icon_biggrin.gif

I have a quick question, how do you level after inserting the dowels without messing up the BC? Is yours not crusting or, are you just that fast?

I am pretty fast, but the video moves faster!...I level just the area where the next cake goes, so it doesnt have to be perfectly smooth since the next cake will cover that. Just make sure to stay within the size
of what the next tier size will be..

They are not that easy to find. I dont usually do the orders, I would have to find out!..But plastic are really nice. Even PVC that is around that size works great!

The recipe I use is in my website, is pretty basic.. Maybe soon I'll try another video on how I make it so I dont get lots of air bubbles.

That was soo cool. Speed stacking! Ok so I'm assuming that when you place your fingers on the smaller cake, then the larger cake, before you dowel you are measuring where to put the dowels. Could you explain that process, how do you get it so precise? It happened so fast I'm not sure what I am seeing there? Thanks so much for posting the video. You're amazing.

Wow! Thanks for posting the video. I have a question about your buttercream recipe ... do you use it as written to smooth ice a whole cake? Or do you add extra liquid to thin it out a bit? I haven't tried your recipe yet, but I've been looking for a really good one with both butter and shortening and I can't wait to try it. You're so helpful ... it's much appreciated!!

Ok sorry. One more question.... Do you buy your cardboard cake boards already covered/lined in wax paper, or do you cover them...with what tape? I would think the wax paper (once the tape got moist) would rip off or dislodge somehow.

Wow Edna... another wonderful video... You are amazing.. thumbs_up.gif Now for the quesrtion........ icon_lol.gif You stated to cut the dowels (love those cardboard dowels btw) 1/4" below the buttercream height.. So.. then you remove the icing on top of the cake to the level of the dowels? Sort of how you remove some cake to stack a topsy turvy.. Is that correct? I hope that question made sense.. icon_confused.gif

I move fast and I measure fast!...I use my fingers to measure..I do this a lot even with sewing. But if you are not good at eye measuring you could use the pan of the cake that goes on top and mark it with a toothpick. Or you can measure the cake with a ruler and mark the size of it on the cake.

The cake board soaks grease..to avoid this we put wax paper on both sides so it stays stronger. You can use a glue gun for this.

Love the video.You did it again .I have watched it 5 times already .I love the fact that it reassures me that professionlas also have accidents. I almost always do some thing to my finished cakes .Once I dropped my 6inch while stacking ,other times I poke them while stacking.
