Questions About "macsmom's" Mmf???

I made Macsmom's MMF yesterday and I have a couple questions about it. I am used to making MMF with just marshmallows and powdered sugar.

Macsmom's recipe calls for butter flavoring, popcorn salt, and glycerin. After making the MMF (which tastes awesome by the way) I noticed the texture of the MMF tasted gummy compared to the other MMF I have been making. Is this the way it is supposed to be? I am just curious what the popcorn salt and glycerin is supposed to do for the MMF?

CMIIW but i think glycerin helps in the elasticity of the fondant and the salt cuts the sweetness.
