I made some today but I won't need it til later in the week. If I put it the refridgerator do I need to rewhip later? Can I leave it on the counter and how long will it last?

It will last forever! I would give it a little whip with a spoon or spatula once you are ready to use it. You can put it in the fridge if you like, but you can leave it out as well.

Sugarshack once posted that she leaves it on the counter for 2 weeks. I usually leave it out up to one week, then rewhip. I also freeze for up to 6 months, defrost, then rewhip. It always works wonderful.

I made a batch of it last night and what I had left (quite a bit... only did a 9 13 cake) I put in the freezer in smaller quantities.

But, you can leave it on the counter in a airtight container until you need it!
