I'm making a wedding cake for my friend, it is three tiers. The first two are caramel mud cake with white chocolate ganache, and my friend likes the 'rough' look of the ganache on the outside. The bottom tier is a fruit cake with chocolate chunks, I know that traditionally a fruit cake should be covered in icing and marzipan optional. Will it be really odd to cover the fruit cake in white chocolate ganache? otherwise it won't match the top two tiers.

thanks

Hi and Congrats on your 1st post, wendybanks. icon_smile.gif

Reading your subject line, my first thought was chocolate ganache on a fruit cake, "No way!"

However, white chocolate ganache is a whole other story... My DH likes fruitcake so I make it quite often. Think it would be tasty with cocoa butter ganache.
