Apologies if this question has been answered before but I just wondered how long a madeira sponge covered in buttercream and then fondant would last? How far in advance can you make the cakes for them to stay moist? Many thanks

In my opinion, you need to do a personal test on your own. Each recipe is different. I would do one, and test it each day.
Each baker is different, each recipe might react differently...

Ordinarily a cake can last six days or so; but you want the customer to be able to keep it for several days, so always do cakes as close as possible to the date the customer gets it.
