how far in advance can i make a wedding cake, i'ts now a week before the wedding. i want to fill it with raspberry preserves and cover it with rolled fondant, the wedding is on a thursday. thank you in advance for your help. icon_confused.gif

I usually bake 2 days before, decorate the day before. But if the entire cake is fondant covered, you could start a day or two earlier, since the fondant keeps cake fresh.

If not, then go ahead and bake those cakes not and freeze them. Wrap them well in plastic cling wrap (while they are still warm but not hot).
