I definitely need to follow a recipe. I thought I would try to doctor a yellow cake mix. I added some lemon juice, lemon extract, and sour cream to a cake mix. They baked up fine, but the minute I pulled them out of the oven they shrank and sunk. The had a souffle like texture and were very eggy tasting.
I told my DH, Alton Brown could probably tell me what went wrong with the chemistry part of recipe. Only tried and true recipes for me from now on. DH likes them, so they didn't get pitched. Live and Learn!
Unfortunately, that's all part of the process. I like to use tried and true recipes too though.
