How Do I Store?? Please Help!! :(

How do I store my swiss meringue frosted cupcakes? Are they okay out of the fridge cause of the egg and butter? But if I put in the fridge will it get hard/separate?

I would refridgerate them, but that's just my opinion. How long are you planning on storing them??

Just until tomorrow.. I have to drive 2 hours away so I wanted to make it today..

I would stick them in the fridge, only to firm up the frosting so that they are less likely to "smoosh" during travel. I'm sure they'd be fine out of the fridge if you wanted too, but I've never had any trouble refrigerating SMBC....HTH! icon_smile.gif
