Has Anyone Seen Any Celtic Knot Cookies?

I am looking for a cutter or some ideas for cookies for an Irish-themed wedding......a celtic knot, or any of the celtic patterns. I have never seen any cookies like that done anywhere. Has anyone here?

If you can do icing image cookies, I have a couple of celtic knot designs I can share. There is also a set of celtic knot patchwork cutters on Global Art I am thinking of buying. Here is the link to the cutters:

Spinningleaf.com has a mold for chocolate covered Oreos that has a Celtic knot on the top. Very pretty...and easy to make!
