I got a request for a lasagna cake and they want a cake for this Sunday. I have a few ideas running around in my head, but any suggestions would be GREATLY appreciated.

So, they want the cake to look like lasagna? Just on the outside, or when it is cut, too?

My first thought would be to make thin layers of sponge cake and layer it with a thick red berry compote or sauce (strawberries, raspberries, and red currants) and vanilla custard or cannoli filling. Basically, like a big trifle. For the "melted cheese" on top, I'd just tint whipped cream a pale ivory yellow and use that.
