Need Advice Please

I have an order for a weding cake in May. The bride wants heart shape on the floating tier cake stand. The problem is that she wants 200 servings and the cakes for the stand only feeds around 100. Should I suggest doing the cake and then recommend a sheet cake or smaller heart cakes to make up the difference? Maybe place some heart cakes around the wedding cake?

Any of those options sound great. I would just talk to the bride, let her know her options, and then go from there.

make small cakes to put around the stand so you can have the exact amount of cake portions you need.

i agree with the other posters-let her know that you could leave some slabs in the kitchen to be cut or have some smaller hearts around the "main" cake (cupcakes could work but then you'd have to decorate 100 little cakes instead of a few smaller cakes-up to you)

I would make 10x4 hearts to set all around the stand. Each will serve 35-38 so you will only need 3 of them.
