Need Advice...asap

I know this has been asked before, but anyways. I have 2 cakes due on friday. how early can I start working on them and make sure they are fresh? One of the cakes will be covered in fondant. The other part fondant and part butter cream. Thanks

You can bake them now and fz them.
You can make any decos that will be attached.
You can make your b'cream
You can make your fondant (if making your own)

All the above can be made now to have on hand when you are ready to decorate the cake.......on Wed or Thurs.

I'd bake Wednesday and decorate Thursday, but I don't freeze anything. If you wanted to freeze them you could bake tonight or tomorrow then have them ready to decorate when you need them.

I find if I do them about 5-7 days ahead of time and wrap them like crazy and freeze them until the day before I decorate...it works out just fine.

yep. So far I have baked and frozen (today). I have made up my fondant, and made the animals that are going on one cake. I guess I was wondering how soon I could decorate them? Since I have to do BOTH of them Thursday night. I work a full time job and don't want to be up till Midnight.
