Diabetic Wedding Cake

So my nephew is getting married to a girl who is diabetic. My nephew is a ...chocolate, chocolate chocolate, and he also thinks that artificial sweeteners cause cancer. icon_wink.gif

I need an excellent recipe that is for diabetics that will be able to look like a wedding cake. That is to say...with fondant. I know she wont be able to eat the fondant, but a lot of people don't anyway.

I DID search the recipes, and I searched the internet, I just want one that has already been tested by people I trust (ie, cakecentral people).

It's not just sugar that diabetics have to watch....it's all the carbs. So, cake in general is a no no. My mom is diabetic. Since it's almost impossible to make a good tasting diabetic cake, my mom would rather adjust her medicine and have a small piece of a regular cake. Have you talked about this with the bride? Does she really want the entire wedding cake to be diabetic friendly? I'm not thinking anyone else would want to eat it.
