Wondering if anyone can give me a general guideline as to how long a cake is "good". Like most of you I do this for fun and friends, but I seem to feel the need to wait until the day before or day of to get the cake done. How long can a "bare" cake sit out (covered of coarse) before it's frosted? How about after is frosted with BC? Fondant? In fridge? I do bake ahead and freeze cakes but it is usually in the freezer for under 1 week. Any advice would be greatly appreciated. I'd like to spend more time on my days off instead of throwing the cake together so it "fresh".

Hi, I make my cakes from scratch. And I bake them two days ahead. I never put my cakes in the fridge. From the day I bake the cakes, the shelf life is 7 days.
