I have a couple of questions if someone could help me out, what kind of cake is firm enough to carve into this shape?

& is it easier to stick fondant icing using buttercream or jam?
& lastly, how would I get pink sugar to stick to the fondant icing?

Hi, you need to have a good densed cake for carving. Maybe a yellow cake or a pound cake. I always use buttercream under my fondant. And use a bit of sugar glue to stick the pink sugar on to the fondant. icon_smile.gif

You can make the sugar glue. Here is a video from aine2, on making sugar glue.
