In my experience, when bringing two pieces of fondant together, rather than overlapping, then trimming, which leaves an ugly seam, I have much better luck sandwiching the excess fondant from both ends together.

Then, with a pair of scissors, cut off the excess. The act of cutting helps to 'glue' the two pieces together. The resulting seam is much neater looking and easier to smooth with your finger. It will still be visible, but less obvious.
