Hi again!

I have gotten some 'orders' from a couple co-workers at my office to make them some Valentine's cupcakes for their spouses. I am soo excited! But one of the ladies asked if I would be able to make hers a day early, as she is going to be away from the office when I would be bringing them in...

I am making a scratch chocolate cupcake recipe and I was hoping you could give me your opinion/suggestions. I was going to perhaps just make her 12 cupcakes a day early (because even though I will have made some BC, I know it will last in the fridge) but I was wondering if I would be ok just making hers a day early, and then making the rest the next night...? Or would that be a potential disaster? Would I just be better off making all of the cupcakes, and keeping the extras in an air tight container for a day in my fridge to ice them the following night? Instead of keeping batter in my fridge for a day??

Sorry for me going on and on!

It is perfectly ok to keep batter in the fridge, especially for just one day.
