hi,
can anyone help me with a sugar-free pistachio filling for a cake i am doing for a diabetic? any help would be appreciated. this is my first sugar-free recipe and not quite sure about it.

I use sugar free pistachio pudding mix with whipping cream to make a low-carb pudding (instead of milk) and it becomes quite thick. This may work- but it would have to be refrigerated.
