Just paid for my class "Wedding Cakes" with Chef Lisa Raeffel (Tuesday, February 10, 2009 6:00pm)! I am so excited! She is going to be in at the Cambridge Culinary School in Boston. It is close to my home and I have taken classes there before.

That's great! I wish they would get something like that here. I am going through cake class withdrawal. I have added 23 new books to my library and have read all I can. I love hands on instruction!

Is there a website or something that you can go to in order to get information about things like this? Just curious. Thanks!

Thanks - it is a one night class/seminar. She will go through stacking, decorating, shipping and the businses side of wedding cakes. I am really interested in the part where you talk to the bride... as you know that can go either way..lol

I am not sure - this is the closest culinary school to me. Although I take many classes from the technical school. I think hands on is the best way to learn! I read and read (like you I have many cookbooks) but sometimes trial and error is the only way to get it right. I dream of being a wedding cake specialist/time will tell.
