Cookies And Candies How Far Ahead....

How far ahead of time should I start working on valentine cookies and candies? I want to have my work done early enough to put orders together and to know what I have to work with. But I want my product to be its freshest. I thought I would start working on most of my candies this week and this weekend start with my cookies.

Guess I just needed a sounding board. Any suggestions welcome.

NFSC? And what kind of candy? Most of the Wilton's melts are usually ok and taste good one week ahead of time. I use the Wilton to make the chocolate covered meringue mushrooms a week ahead and they taste as good as the first day I made them.
